Foodie Friday – Easy Guacamole

I love everything about avocados. They are delicious, beautiful and nutritious. I have recently discovered my favorite guacamole at a local Saskatoon restaurant Las Palapas. It is very basic and really lets the avocado flavour shine. The recipe I have found that is closest to their delicious treat follows.

Nutrition Saskatoon Avocado is a fruit. It has the highest protein and oil levels of all fruit. It is therefore a great source of energy and healthy fats. Avocados have the most concentrated source of nutrients in the darker green portion just beneath the skin. Try not to lose nutrients by peeling too far into the avocado. You can use avocado as a great addition to any snack or salad not just in guacamole!

Inspiration: My yearning for actual spring and summer instead of the dreary weather of this week. Guacamole always reminds me of summer. allrecipes.com has many great recipes to try including the one to follow.

Ingredients: two avocados, lime juice, 1/4 onion, salt, olive oil

Instructions:

1. Chop avocado and onions put into a bowl.

2. Mix in 2 tbsp lime juice, 1/2 tsp salt, 1 tbsp olive oil and pepper to taste.

3. Cover and refrigerate for an hour.

4. Serve with corn chips.

 

Results: Yum. I love simple limey guacamole. Mix it up! It can be as spicy or mild as you want it. I hope this tickles your taste buds even if it isn’t summer yet.

Foodie Friday – Lunch Love

I dislike sandwiches. I am not a big fan of most processed meats. Nutritionally processed meats are not great due to high fat, salt and nitrate content, but I also don’t like the taste of them. Therefore, I find packing lunches tiresome. I will most often take leftovers from supper the night before. However, I don’t always have leftovers. I want new, interesting ideas for lunch. Turns out there are recipes for sandwiches, just like anything else!

Cheddar, Chutney and Apple Sandwich

Info: Chutney is a condiment that varies widely in its composition. Traditionally chutney is served with south East Asian dishes. Chutney can be made up of vegetables, herbs, fruit and spices of any variety. My favorite is fruit chutney. I love the combination of sweet and spice. The chutney I used for this lunch is made locally and found at the Farmer’s Market.

Ingredients: bread, chutney, green apple, cheddar cheese

Instructions:

Note: The instructions below are to make a type of melt. This sandwich can be made simply as is or also can be made as grilled cheese.

1. Turn oven on to 350°F.

2. Spread chutney over bread – I used naan bread.

3. Cut apple in thin slices and spread evenly over bread.

4. Cover with sliced cheddar cheese.

5. Pop in the oven for a couple minutes and finish on broil to make your cheese crispy.

 

Results: Mmmmm….I ate it on Monday and I am still thinking about it. The great thing about this sandwich idea is that you can use different chutney, apples or cheese for a totally different flavour. I like it warm best but I am sure it would make a great cold sandwich as well. Experiment away lunch lovers!
